Spiderweb Pancakes!

I found this recipe for cinnamon roll pancakes which seemed deliciously fall-y and easily adapted into a halloween themed spiderweb pancake! However, we all know that I generally suck at pancake making so they didn't flip that nicely. I do however have a pretty picture of one before I flipped it so you can see the spiderweb pattern. These were good but really too sweet for breakfast....better as a breakfast for dinner night I think. They tasted exactly like a cinnamon roll!
Cinnamon Roll Pancakes
(adapted from recipe girl)
Ingredients:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 Tablespoon canola oil
1 large egg, lightly beaten
Cinnamon Filling:
1/2 cup butter, melted
3/4 cup brown sugar, packed
1 Tablespoon ground cinnamon
Cream Cheese Glaze:
4 Tablespoons butter
2 ounces cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract
Directions:
1. In a medium bowl whisk flour, baking powder and salt. Add in milk, oil and egg.
2. In a small bowl mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside.
3. In a small bowl heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla extract; set aside.
4. Heat large skillet over medium-low heat. Spray with nonstick spray. Scoop about 3/4 cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more.
5. When ready to serve, spoon warmed glaze onto the top of each pancake.

Missing Polly's

We are very sad that Polly's Pancake Parlor is so far away. 418 miles and 7 hours and 32 minutes away to be exact, barring traffic and natural disasters. Sad story. However we can take some comfort in the fact that we returned with their Buckwheat Pancake mix! We decided on the Buckwheat because 1) it was delicious and 2) slightly healthier than the traditional mix. Mr. Lawyer was in charge of the pancakes because I'm a waffle girl and have technical difficulties with pancakes. In case you need a refresher, click here! I was in charge of our lovely maple turkey sausage. Healthy choices part two: turkey sausage and only one patty each (yeah...that didn't go over too well).

Brunch Disaster!

I clearly stated before I attempted to make brunch that I had never made pancakes before. Which is the truth. I'm more of a waffle girl. Bacon and Sausage I can handle. Scrambled eggs with cheese okay. Beyond that I've never really cooked a lot of breakfast food even though I love it and would do just about anything for a breakfast sandwich.  So it really should not come as any surprise that I burnt the pancakes (only on one side!). Luckily the burnt part peeled right off so no harm done. The recipe was solid. I was really being over ambitious and wanted to test out my new pancake pen and molds. I should have started with normal pancakes before attempting the molds. However they did work well and I loved the pen, I'm going to use it on my waffle iron next.
