Jeezy Creezy it's cold outside! Luckily this baked potato smothered in broccoli and spicy cheese sauce was very filling and warming. I used my go to <a href="http://guineapigkitchen.blogspot.com/2013/01/baked-potato-redemption.html">Perfect Baked Potato Recipe</a>. Mr. Lawyer and I both thought the spice was at a minimum and would add more hot sauce next time for a bigger zip. Besides that this cheese sauce was a hit and very versatile. Bring on the baked potatoes, cooked veggies, hot pretzels, and nachos!</div>

2. Melt the butter in a medium saucepan. Once it starts to bubble add in the flour, whisking constantly until a paste forms.</div>

I made this chickpea salad this summer and it blew my mind. The flavors were amazing and intense. I've been thinking about it the past few days and I think it might be making a reappearance soon. Do not skip one single thing...grill the corn (I held it above my gas burner), the herbs must be fresh, and oh baby that lime! It was such a great change up from the typical sumer macaroni or potato salad. Plus it held up well over a few days and the flavor intensified. </div>

3 cups chickpeas (or 2 (15-ounce) cans, drained and rinsed)<br />
4 green onions, thinly sliced<br />
2 ears grilled corn, cut from the cob<br />
1 pint cherry tomatoes, quartered<br />
3 tablespoons chopped fresh basil<br />
2 tablespoons snipped fresh chives<br />
1/4 teaspoon salt<br />
1/4 teaspoon pepper<br />
3 tablespoons olive oil<br />
2 tablespoons red wine vinegar<br />
1.5 tablespoons honey<br />
3 garlic cloves, minced or pressed<br />
1 lime, juiced and zested<br />
<u>Directions:</u><br />
1. In a large bowl, combine the chickpeas, onions, corn, tomatoes, basil and chives. Toss well with the salt and pepper. In a small saucepan, add the oil, vinegar, honey, garlic, lime juice and zest. Heat over low heat and whisk until the mixture is warm and garlic cloves are sizzling a bit.<br />
2. Pour the liquid over the chickpeas and and toss well to coat. Cover with a piece of plastic wrap and refrigerate for at least 30 minutes before serving. It tastes better as it sits! Serve with toasted baguettes spread with coconut oil or whipped feta.</div>

I had a bunch of rice leftover from earlier in the week so I decided to try my hand a fried rice since I had read that using leftover rice was better for the dish. I omitted the scrambled egg because I was not feeling it and used a fun bag of frozen veggies instead of fresh because I had zero energy (yay pregnancy on both accounts!). Once you get use to the idea that this fried rice is not going to compare to restaurant fried rice it's amazing. It definitely has a lighter, healthier taste which is probably due to the copious amounts of msg that are missing from it. I'll be keeping this recipe around for any leftover rice! It was the perfect snack for this cold spell we've been having....lies. It wasn't a snack. I straight up ate just fried rice for dinner two nights in a row.</div>

Heat 1/2 tablespoon of butter in a large skillet over medium-high heat until melted. Add egg, and cook until scrambled, stirring occasionally. Remove egg, and transfer to a separate plate.<br />2. Add an additional 1 tablespoon butter to the pan and heat until melted. Add frozen veggies, onion, and garlic. Season with salt and pepper if you wish. Saute for about 5 minutes or until the onion are soft. </div>

Thomas Keller's Chicken Soup was the next recipe Mr. Lawyer tackled while I was languishing away on the couch. Fall was official here and soup was just what the doctor ordered to keep the chill away. Mr. Lawyer did all the work while I read the recipe to him from my perch at the breakfast bar. We declared this our "Slow Food Day" because this recipe was from scratch and intense. Full disclaimer: we didn't make the dumplings. Mr. Lawyer was doing so much I didn't want to have him make dumplings too. We just added some noodles at the end and cooked them until they were done. But the dumpling recipe sounds divine. Even without making the dumplings there are a lot of steps. I think it took us two hours from start to finish. Don't be scared off! This soup is amazing and totally worth the effort. It was so rich and velvety and completely made me feel better about being useless.</div>

<u>Ingredients Part I:</u><br />1 tablespoon (1/2 ounce) unsalted butter<br />1 cup thinly sliced carrots<br />1 cup coarsely chopped celery<br />1 cup coarsely chopped onion<br />1 cup coarsely chopped leeks<br />Kosher salt<div>
<u>Ingredients Part II:</u><br /><div>
4 quarts Chicken Stock<br />5 stalks celery<br />3 large carrots<br />1 teaspoon honey<br />1 bay leaf<br />2 thyme sprigs<br />1 large garlic clove, crushed, skin left on<br />Kosher salt and freshly ground black pepper<br />1/2 cup (about 4 ounces) Roux<br />2 cups cooked shredded chicken (dark or white meat)<br />1/4 cup minced chives<br />1 tablespoon champagne vinegar<br />Flat-leaf parsley leaves</div>

<i><u>Ingredients for Dumplings:</u><br />1/2 cup water<br />4 tablespoons (2 ounces) unsalted butter<br />1 1/2 teaspoons kosher salt<br />2/3 cup all-purpose flour<br />1 teaspoon Dijon mustard<br />2 large eggs<br />1 tablespoon plus 1 teaspoon minced chives</i><div>
<u>Directions:</u><br />1. Melt the butter in an 8- to 10-quart stockpot over medium heat. Add the carrots, celery, onions, and leeks, from Part I and season with salt, and cover with a parchment lid. Reduce the heat to low and cook very slowly, stirring occasionally, 30 to 35 minutes, until the vegetables are tender. Remove and discard the parchment lid. Set pot to the side.<br /><i>2. Make the dumplings: Fill a wide deep pot with salted water and bring to a simmer. Set up a stand mixer fitted with the paddle attachment.<br />3. Combine the water, butter, and 1 teaspoon of the salt in a medium saucepan and bring to a simmer over medium-high heat. Reduce the heat to medium, add the flour all at once, and stir rapidly with a stiff heatproof or wooden spoon until the dough pulls away from the sides of the pan and the bottom of the pan is clean. The dough should be glossy and smooth but still moist; enough moisture must evaporate from the dough to allow it to absorb more fat when the eggs are added. Continue to stir for 4 to 5 minutes, adjusting the heat as necessary to prevent the dough from coloring; a thin coating of dough will form on the bottom and sides of the pan. When enough moisture has evaporated, steam will rise from the dough and the nutty aroma of cooked flour will be noticeable.<br />4. Immediately transfer the dough to the mixer bowl. Add the mustard and the remaining 1/2 teaspoon salt and mix for a few seconds to incorporate the ingredients and release some of the heat. With the mixer on the lowest speed, add the eggs one at a time, beating until the first egg is completely incorporated before adding the second and incorporating it. Then add the chives and incorporate. Remove the bowl from the mixer.<br />5. Line a baking sheet with parchment paper. Shape the dumplings using two soup spoons to make a quenelle shape, dropping them into the simmering water. Cook the dumplings in batches of about 6 to avoid crowding the pot and allow them to cook evenly. Once the dumplings rise to the surface, it will take about 5 minutes for them to cook; remove one and break it open to make sure it is cooked. With a slotted spoon, transfer the dumplings to the baking sheet, and cook the remaining dumplings. (You will have about 18 dumplings.)<br />6. Once the dumplings have cooled, trim any uneven edges with scissors.</i><br />7. Finish the soup: Add the chicken stock to the vegetables and bring to a simmer. Simmer for 30 minutes, then strain the soup base into another pot and discard the vegetables.<br />8. Peel the celery stalks with a peeler. Cut each stalk crosswise on the diagonal into thin slices about 11/2 inches long. As you get to the wider lower part of the stalk, adjust the angle of your knife to keep the pieces relatively the same size. You need about 1 1/2 cups celery for this recipe (reserve any extra for another use). Cook the celery in a large pot of boiling salted water until just tender. Drain, cool in an ice bath, and drain again.<br />9. Cut the carrots lengthwise into quarters and then crosswise into bite-sized pieces. As each carrot widens, adjust the size of the cut to keep the pieces bite sized. You need about 1 1/2 cups carrots for this recipe (reserve any extra for another use).<br />10. Put the carrots in a saucepan, add the honey, bay leaf, thyme, garlic, and a pinch of salt and pepper, and cover with cold water. Bring to a simmer and cook for 4 to 5 minutes, or until the carrots are tender but slightly resistant to the tooth. Drain and transfer to paper towels.<br />11. Bring the soup base to a simmer and whisk in the roux a little at a time until thick enough to coat the back of a spoon; you may not use all the roux. Simmer for 30 minutes, skimming often—this is necessary to remove all impurities from the roux. (The soup will continue to thicken as it simmers.)<br />12. Add the dumplings, chicken, carrots, celery, and chives to the soup and heat through. Season with the vinegar and salt and pepper to taste.<br />13.Transfer to a large serving bowl and sprinkle with parsley leaves.</div>

One of our honeymoon goals was to hit up as many amazing restaurants as possible. Since I don't remember ever being hungry, not even once, on the entire trip I'd say we succeeded! We were very lucky to visit three Thomas Keller places. Every morning a heavenly basket of pastries and breakfast goodies from Bouchon Bakery was delivered to our cottage. TO. DIE. FOR. Our first night in the Napa area we had dinner at Ad Hoc and a couple of days later at Bouchon Bistro. Everything was amazing. Naturally we received two of his cookbooks for Christmas that year. </div>

I was only able to stomach a few bites but what I had was divine. I was particularly impressed with the braised olives, the saltiness really hit the spot. <u>Ingredients:</u><br />
3 fennel bulbs<br />
12 chicken thighs<br />
Kosher salt<br />
Canola oil<br />
1 cup coarsely chopped onion<br />
1 tablespoon finely chopped garlic<br />
1/4 cup dry white wine, such as Sauvignon Blanc<br />
1 cup Ascolane or other large green olives, such as Cerignola<br />
1/4 teaspoon red pepper flakes<br />
4 fresh or 2 dried bay leaves<br />
4 strips lemon zest<br />
8 thyme sprigs<br />
1 cup chicken stock<br />
About 1/3 cup flat-leaf parsley leaves<br />
<u>Directions:</u><br />
1. Cut off fennel stalks. Trim bottom of bulbs and peel back the layers until you reach the core; reserve the core for another use. Discard any bruised layers, and cut the fennel into 2-by-1/2-inch batons. You need 3 cups fennel for this recipe; reserve any remaining fennel for another use.<br />
2. Preheat oven to 375 degrees. Set a cooling rack on a baking sheet.<br />
3. Season chicken thighs on both sides with salt. Heat some canola oil in a large ovenproof saute pan or roasting rack that will hold all the thighs in one layer over medium-high heat. Add thighs skin-side down and brown on the skin side, about 4 minutes. Turn thighs over and cook for about 1 minute to sear the meat. Transfer to the cooling rack.<br />
4. Reduce heat to medium-low, add onion to the pan, and cook for 1 1/2 minutes. Add garlic and cook for 1 minute. Cook, stirring often, until onion is translucent, about 5 minutes. Stir in fennel, turn heat up to medium, and cook, stirring often, until fennel is crisp-tender, about 10 minutes.<br />
5. Pour in wine and simmer for about 2 minutes to burn off alcohol. Stir in olives, red pepper flakes, bay leaves, lemon zest, and thyme, then pour in chicken stock. Increase heat, bring liquid to a simmer, and cook until fennel is tender, about 1 minute.<br />
6. Taste the stock and season with salt as needed. Return chicken to the pan skin-side-up, in a single layer. When the liquid returns to a simmer, transfer to the oven and cook for about 20 minutes, until chicken is cooked through.<br />
7. Turn on the broiler, and put pan under the broiler for a minute or two to crisp and brown the skin. Remove from oven, and transfer to a serving platter. Garnish with parsley leaves.</div>

After a nice little hiatus I'm back in business...at least a couple days a week! Life has included: buying a house (!), a puppy (!!), and a bun in the oven (!!!). Understandable blogging was not high up on my priority list as I moved into this new adult chapter of life. A few trusty standby recipes and owning a real grill for the first time have gotten us through the adjustment period of moving to the suburbs. Now that we are settled in a bit and I'm getting sick a little less (ah, the lovely first trimester) I'm starting to feel the urge to try new recipes.<br />
The other night a recipe for copycat Asian BBQ chicken lettuce wraps from PF Changs. I've only been there once and I did not have the lettuce wraps so I can't really compare it to the real deal but they were very good! This recipe is both similar and different from our favorite <a href="http://guineapigkitchen.blogspot.com/2012/03/double-it.html">Cashew Chicken Lettuce Wraps</a>.<br />
<b>Pros/Similarities:</b><br />
-uses ground chicken, not need to cut up slimy chicken breast and hope you get all the fat trimmed<br />
-the flavor is awesome!<br />
-easy to customize: use lettuce wraps or serve on rice, toss in whatever veggies you have on hand<br />
<b>Cons/Differences:</b><br />
-The sauce requires hoisin sauce (asian bbq sauce) which I general don't have on hand and taste can vary greatly depending on brand. I used Soy Yay Garlic Hoisin and was very impressed. I don't think I'll go back to trying other brands.<br />

<u>Ingredients:</u><br />
1 tablespoon sesame oil</div>
<div>
1 tablespoon peanut oil<br />
1 pound ground chicken<br />
1 large onion, chopped<br />
2 tablespoons garlic, minced<br />
1 tablespoon soy sauce<br />
¼ cup hoisin sauce (I loved Soy Yay's Garlic Hoisin)<br />
2 teaspoons fresh ginger, minced (I would grate it next time)<br />
1 tablespoon rice wine vinegar<br />
3 teaspoons sriracha sauce<br />
1 can (8 ounces) sliced water chestnuts, drained and finely chopped<br />
1 small bunch green onions, sliced (Omitted, I didn't have any on hand)<br />
2 teaspoon sesame oil</div>

1/3 cup cashews or peanuts, chopped<br />
Iceberg, Bibb or butter lettuce leaves, rinsed and drained<br />
<u>Directions:</u></div>
<div>
1. Heat up the peanut oil and sesame oil in a medium skillet over medium heat. Add the ground chicken and cook until it is cooked through, break it up into smaller chunks as it cooks. </div>
<div>
2. When the chicken mostly cooked add the onion, garlic, and ginger. Cook for a few minutes until the onions are heated through and reach the desired consistency (I didn't want my raw like the original recipe called for).</div>

3. Lower the heat. At this point if there is a lot of liquid from the chicken and onions drain it, you don't want it to dilute the sauce! In a separate bowl mix the soy sauce, hoisin sauce, rice wine vinegar, sriracha, and 2 teaspoons sesame oil. Stir it well and pour it into your meat mixture, stir until complete coated.</div>

4. Add in the water chestnuts, green onion, and cashews/peanuts. Let sit until heated through and sauce is thickened, stirring occasionally.</div>

5. Serve with lettuce, rice, or whatever toppings you want!</div>

I've been pretty busy taking advantage of this gorgeous weather and catching up on my recreational reading. My stack of magazines waiting to be read has disappeared and I'm checking off my Christmas books left and right. Every morning I get up early and start reading on our balcony with my coffee. I get some good sunshine time until a little afternoon. Then I move inside and putter around with chores and kitchen things. We've been having a lot of fresh food and salads which is wonderful but a little lame in the new recipe department. </div>

I ventured down to Reading Terminal the other day and picked up three avocados for 99 cents and 5 poblano peppers for 99 cents. It seemed like we were destined to have a Mexican inspired dinner! I used my favorite <a href="http://guineapigkitchen.blogspot.com/2011/04/holy-guacamole.html">Alton Brown recipe</a> (minus the roma tomatoes) to whip up a spicy batch of guacamole in the molcajete. </div>

Next up were these lovely stuffed poblano peppers. I cheated a bit and used a package of spanish style rice instead of plain brown rice or other healthy grain. The result was delicious! There was a ton of filling leftover over which we're going to finish either as burritos or a rice bowl. This was a great summer dish to welcome in this fabulous weather we've been having.</div>

<u>Ingredients:</u><br />5 poblano peppers<br />1 package spanish style rice<br />1.5 cups salsa<br />1 15 oz. can of black beans<br />1½ cups frozen corn kernels<br />1/2 of a small white onion, diced<br />1 teaspoon cumin<br />1 teaspoon chili powder<br />Cayenne to taste<div>
A handful of chopped cilantro<br />Shredded cheese (Cabot all the way!)<br /><u>Directions:</u></div>

1. Cook rice according to directions.</div>
<div>
2. Slice peppers in half and remove the ribs and seeds.<br />3. Place the peppers in a baking dish skin side up. Broil about 7 minutes, then flip the peppers and broil 7 minutes more.<br />4. In a large skillet combine the beans, onions, salsa, corn, cumin, chili powder, cayenne, and cilantro. Heat over low heat. Stir in the cooked rice and mix well.<br />5. Place the peppers skin side down and spoon in the desired amount of filling. Top with cheese and broil until cheese is melted.</div>

Last weekend was miserable. It rained for almost three days. But a good rainy weekend is good for a few things: staying in your pjs, binge watching netflix, reading in bed, and soup! I thought this was a pretty good potato soup recipe but then I have no experience making potato soup. I've had some very good restaurant potato soup but I'm sure they put a ton of unhealthy things in it instead of just half a ton. I used our Dinosaur BBQ Cajun Foreplay Seasoning and it was divine.</div>

<u>Ingredients:</u><br />6 slices Thin Bacon, Cut Into 1-inch Pieces<br />1 whole Medium Onion, Diced<br />3 whole Carrots, Scrubbed Clean And Diced<br />3 stalks Celery, Diced<br />6 whole Small Russet Potatoes, Peeled And Diced<br />8 cups Low Sodium Chicken Or Vegetable Broth<br />3 Tablespoons All-purpose Flour<br />1 cup Milk<br />1/2 cup Heavy Cream<br />1/2 teaspoon Salt, More To Taste<br />Black Pepper To Taste<br />1/2 teaspoon Cajun Spice Mix<br />1 teaspoon Minced Fresh Parsley<br />1 cup Grated Cheese Of Your Choice<br /><u>Directions:</u><br />1. Add bacon pieces to a soup pot over medium heat and cook bacon until crisp and fat is rendered. Remove the bacon from the pot and set it aside. Pour off most of the grease, but do not clean the pot.<br />2. Return the hot to medium-high heat and add the onions, carrots, and celery. Stir and cook for 2 minutes or so, then add the diced potatoes. Cook for 5 minutes, seasoning with salt, pepper, and Cajun spice.<br />3. Pour in the broth and bring it to a gentle boil. Cook for 10 minutes, or until the potatoes are starting to get tender. Whisk together the flour and the milk, then pour into the soup and allow the soup to cook for another 5 minutes.<br />4. Remove half to 2/3 the soup and blend in a blender/food process until completely smooth. Pour it back into the soup pot and stir to combine. Let it heat back up as you taste for seasonings, adding more of what it needs. Stir in cream, then stir in parsley, reserving a little for garnish.<br />5. Serve in bowls garnished with parsley, grated cheese and crisp bacon pieces.</div>

This chicken dish was pretty yummy and versatile. Although I must admit I still like my <u><a href="http://guineapigkitchen.blogspot.com/2012/03/double-it.html">Cashew Chicken</a></u> the best. The first night I served it over quinoa and then the next as tacos. It reheated very well and I took it in for lunch a couple of times. If you're in the mood for something on the spicy side of things than this is the dish for you!</div>

<u>Ingredients:</u><br />1/4 cup peanut/veggie/coconut oil (I used less)<br />1 pound chicken breast, trim into bite sized pieces<br />2 shallots or one small onion, diced<br />1/4 cup Sriracha (you can adjust more or less)<br />1/4 cup Honey<br />Juice from one lime<br />Salt & Pepper<br /><u>Directions:</u></div>

1. Heat oil in a large pan over medium heat. Saute the shallots until soft.</div>

2. Season chicken with salt and pepper. Add chicken to pan with shallots and cook until browned on each side. Drain any excess chicken juice.</div>

My organizing obsession got a little out of hand today. I saw this colorful binder system on pinterest and just had to have it. Now that we're beginning our journey as a married couple it made sense to organize everything nicely. Our categories are Medical/Insurance, Auto (it should read "stupid car"), House (!!!), Taxes, Bills etc (for any major bills, purchases, warranties, receipts, etc we should keep), and finally Pet paperwork! The store had two more different shades of blue and green...can you think of any other categories we should have? I really just want to buy those last two colors!</div>

<u>Ingredients:</u><br />1/4 cup of grainy, course mustard (I subbed more smooth, spicy Gulden's Mustard)<br />1/4 cup smooth dijion mustard (Grey Poupon of course!)<br />1/2 cup honey<br />3 teaspoons extra virgin olive oil<br />1/2 of a small yellow onion, diced<br />2 cloves garlic, minced<br />2 1/2 pounds boneless skinless chicken tenderloins (I cut up chicken breasts)<br />salt and pepper<br />3 - 4 small sprigs of fresh rosemary<br /><u>Directions:</u><br />1. In a small bowl, combine the mustards, honey, and 2 teaspoons of the olive oil.<br />2. In a sauté pan or cast iron skillet, add 1 teaspoon of olive oil.<br />3. Add the onion and sauté over medium heat until golden and tender, about 5 minutes. Add the garlic and sauté for an additional 1 - 2 minutes, until fragrant.<br />4. Place the chicken tenderloins on top of the onion and garlic mixture, or if the pan you cooked the onion and garlic in is not oven safe, transfer the onion and garlic to an oven safe dish and add the chicken to it. Salt and pepper the tops of the chicken according to your personal preference.<br />5. Pour the honey mustard mixture on top of the chicken. Arrange the rosemary sprigs around the chicken in the pan.<br />6. Bake the chicken covered at 400 degrees F for 20 minutes. Then remove the cover, baste the chicken with the sauce, and continue to cook for an additional 20 - 30 minutes uncovered, or until the chicken is browned on top and cooked through.</div>

The Mother Unit and Frank gifted us with some venison a couple of months ago. Tonight the Bambi tenderloin made a delicious appearance! Next on the docket is the venison roast, perhaps making an appearance as some burgers. The marinade was quite good although I did add a couple extra dashes of worcestershire to my own tenderloin piece for some extra zip. Since we don't have a grill I cooked it up in my cast iron pan. I liked this marinade more than the <u><a href="http://guineapigkitchen.blogspot.com/2013/11/first-thanksgiving.html">herb marinade</a></u> we had at First Thanksgiving but I missed the horseradish cream! <u><a href="http://guineapigkitchen.blogspot.com/2014/02/kale-salad.html">The Kale Salad</a></u>, my current favorite, made an appearance and as did some red beans and rice.</div>

3 tablespoons canola oil<br />
1 tablespoon lemon juice<br />
1 tablespoon Worcestershire sauce<br />

1 to 1.5 pounds worth of venison tenderloin or steak<br />

1. Mix all marinade ingredients together in a plastic bag. Add the venison to the bag.<br />

This salad knocked my socks off which was pretty awesome considering it was made from leftover kale and random bits of things from the cupboards! A salad was in order since I had a bunch of leftover kale from the deliciously healthy <u><a href="http://guineapigkitchen.blogspot.com/2014/02/green-meatloaf.html">Green Meatloaf</a></u>. There was also some leftover feta languishing away in the fridge so I tossed that it and topped it off with one of my favorite salad topping combos: cranberries and pecans (or sunflower seeds). A tangy lemon vinaigrette was mixed up and my poor leftover kale was turned into a deliciously zippy salad. The tartness of the vinaigrette worked well with the sweetness of the cranberries. The best part is it was amazing the next day for breakfast! Since kale is so hearty it stood up to the dressing and did not get soggy and mushy after it was dressed. The flavors melded together well and I've already got another kale salad lined up for this week!</div>

I sauteed up some onion, garlic, and a package full of baby bella mushrooms then dumped in a (rinsed) can of cannellini beans and diced tomatoes. Let it simmer for a bit and voila! A healthy fiber and protein packed dish that made an excellent and filling breakfast...which a big squirt of hot sauce for a nice wake up call!</div>

During dinner Mr. Lawyer learned of my inexperience with Tastykake. I've only ever had the kandy kakes. We fixed this by polishing off our bottle of wine, walking down to the Wawa, and purchasing a nice sampling of sugary goodness. Behold our Tastykake and wine paring! Then we moved all the furniture and brought in all the blankets and pillows to have a camp out. We feasted on our cheese and champagne while watching WALL-E, a movie that has special significance to our time in grad school.</div>
