Honey Mustard Love

I've always had a love affair with honey mustard so I might be a little bias when it comes to loving this recipe but Mr. Lawyer liked it too and lawyers never lie right? This was easy and amazing. For lunch the next day I chopped up the leftover chicken and spooned the sauce over the leftover quinoa. It was to die for. This recipe has earned a spot next to my favorite Cashew Chicken Lettuce Wraps. I want to make both of these recipes over and over again.
Honey Mustard Chicken

Ingredients:
1/4 cup of grainy, course mustard (I subbed more smooth, spicy Gulden's Mustard)
1/4 cup smooth dijion mustard (Grey Poupon of course!)
1/2 cup honey
3 teaspoons extra virgin olive oil
1/2 of a small yellow onion, diced
2 cloves garlic, minced
2 1/2 pounds boneless skinless chicken tenderloins (I cut up chicken breasts)
salt and pepper
3 - 4 small sprigs of fresh rosemary
Directions:
1. In a small bowl, combine the mustards, honey, and 2 teaspoons of the olive oil.
2. In a sauté pan or cast iron skillet, add 1 teaspoon of olive oil.
3. Add the onion and sauté over medium heat until golden and tender, about 5 minutes. Add the garlic and sauté for an additional 1 - 2 minutes, until fragrant.
4. Place the chicken tenderloins on top of the onion and garlic mixture, or if the pan you cooked the onion and garlic in is not oven safe, transfer the onion and garlic to an oven safe dish and add the chicken to it. Salt and pepper the tops of the chicken according to your personal preference.
5. Pour the honey mustard mixture on top of the chicken. Arrange the rosemary sprigs around the chicken in the pan.
6. Bake the chicken covered at 400 degrees F for 20 minutes. Then remove the cover, baste the chicken with the sauce, and continue to cook for an additional 20 - 30 minutes uncovered, or until the chicken is browned on top and cooked through.

Cast Iron Love

I'm not sure how I survived without a cast iron skillet for so long.
This dish doesn't look pretty but it was hearty and delicious. It made amazing leftovers too! The mushroom, onion, and garlic smelled divine when it was cooking up. This dish definitely took care of my mushroom craving.
Skillet Steak & Mushrooms with Gorgonzola Pasta

Ingredients:
1/2 pound steak, sliced into thin strips
1 teaspoon salt
1 teaspoon fresh pepper
1/4 teaspoon minces rosemary
4 tablespoons butter, divided in half
4 cloves garlic, minced
1/2 onion, sliced
10 ounces mushrooms (white or baby bella)
1 cup white ale
1/4 cup half & half
Gorgonzola cheese crumbles
Pasta, cooked al dente and drained
Directions:
1. Melt 2 tablespoons of butter in a cast iron skillet until hot. Add steak and cook until just browned, removed from pan.
2. Add the remaining 2 tablespoons butter, mushrooms, onion and garlic. Cook until the mushrooms get slightly soft, about 5 minutes.
3. Add the white ale. Simmer until the liquid is reduced, about ten minutes.
4. Turn off heat, stir in the half & half. Return the steak to the skillet and season with salt, pepper, and rosemary. Simmer until slightly thickened and heated through, about 5 to 8 minutes.
5. Serve over pasta and sprinkle with gorgonzola!

A Must Make Dinner!

Instead of new recipes today we have two must try repeats!
The pork delicious, amazing, and oh so tender! Mr. Lawyer started the brining process this morning, if you've never brined anything before give it a try! I highly recommend this recipe because the flavor is so amazing. It is divine! It was the perfect recipe to break in our new cast iron skillet.
For the roasted veggies I diced up a combination of butternut squash, carrots, and turnips for the veggies. There is nothing like roasted veggies! I love the little caramelized bits around the edges. The colors were very vibrant and candy corn themed.
Our fall themed tablescape featuring the cool hues of Plum and Lapis, fall leaf inspired napkins, and a beautiful centerpiece made with leftover wedding flowers.
I love my gurgle pot. It doubles as a great vase. So cute!
