Crazy Confessions

I don't really have any pictures for a February Roundup so you get some crazy confessions that are mostly food/kitchen related.
Movie and a trip to Wegman's for pizza? Best date ever!

1. I once drove to Wegmans during a blizzard to get their frozen pizza and a six pack. I make super safe decisions like that.

2. I like to clean when I'm intoxicated and often take dirty dishes out of the dishwasher to hand wash them.

3. Before I received my Fiesta mugs I had four very specific mugs for each beverage: coffee, tea, hot chocolate, medicine (like theraflu). The beverage MUST go in it's specific mug. Mr. Lawyer thinks I'm crazy but he knows which is which and makes it appropriately.

4. This wedding registry stuff is making me feel like a kitchen snob. I have all the little stuff and really want the fancy knives, ridiculous pots, and heavenly comforter but I feel guiltyyyyyy.

Thanksgiving might be my favorite holiday. All of the food without the let down of being a big kid on Christmas morning. Although after two awesome and food filled Thanksgivings this year, I'm really just craving some ham.

Special Request!

I had a special dinner request from Mr. Lawyer: Spaghetti and Meatballs. This worked out perfectly as there was some frozen ground beef that I wanted to use up. I try to be diligent with the "first in first out" rule but sometimes cravings strike and this poor little package of beef got left behind months ago. I also write the date on everything and double wrap everything. I get laughed at for it but I'm paranoid about stuff like that. Anyway, it seemed like some Wegmans Meatballs were on the menu! It had been a while since I made them so I was excited.
Wegmans Meatballs
(from my lovely Wegmans!)
Ingredients:
1 cup Panko Breadcrumbs
2 large eggs
1/2 cup water
1/3 cup grated Pecorino Romano Cheese
2 tsp minced Garlic
2 Tbsp minced fresh Italian parsley
1 tsp Italian Seasoning (or a dash of oregano/basil)
1 tsp salt
1/2 tsp black pepper
1 lb 80% Lean Ground Beef
Directions:
Preheat oven to 450 degrees.
1. Add panko, eggs, water, cheese, garlic, parsley, seasoning, salt, and pepper to large bowl; stir to combine. Add beef; mix by hand until just combined (use the claw! overmixing will toughen meatballs). 

2. Scoop up about 3 Tbsp meat mixture to form balls; smooth by rolling in cupped hands. Arrange meatballs on baking sheet, about 1 1/2-inches apart. 

3. Bake 15-17 min or until internal temp reaches 160 degrees.
I also toasted up some garlic bread and as a little twist I added some finely chopped fresh rosemary to a couple of pieces. It was delicious! You only need a little, too much would be extremely overpowering.

Big Italian Dinner!

I feel like spaghetti and meatballs is always a dish that you compare to your parents (or grandparents!) so I was nervous to make this for the Lawyer but he loved it! And it wasn't a boyfriend lie! I first had this meatball recipe when Grandma Nancy made it for me and even better, it's a Wegman's recipe (♥!)! Grandma made the meatballs according the recipe, the first time I made them I used asiago cheese and they were still amazing. This time I followed the recipe and used pecorino romano. I would change nothing about this recipe unless you wanted to experiment with the cheese, which I completely approve of. The panko breadcrumbs are essential (and we all know what a sucker I am for panko!) These are my go to meatballs!




Wegman’s Meatballs!



(Wegmans obviously)
Ingredients: 
1 cup Panko Breadcrumbs

1 tsp McCormick Italian Seasoning (or a dash of oregano/basil)
1 tsp salt
1/2 tsp black pepper
1 lb Wegmans 80% Lean Ground Beef
Directions: 
Preheat oven to 450 degrees.
1. Add panko, eggs, water, cheese, garlic, parsley, seasoning, salt, and pepper to large bowl; stir to combine. Add beef; mix by hand until just combined (use the claw! overmixing will toughen meatballs). 

2. Scoop up about 3 Tbsp meat mixture to form balls; smooth by rolling in cupped hands. Arrange meatballs on baking sheet, about 1 1/2-inches apart.

I also tried a new sauce recipe out. It was pretty good although the name was misleading. I could taste the spicy but not the basil (except for the torn basil we put on top, from my very own basil plant!) I also simmer the meatballs in the sauce for a while after they come out of the oven. Supposedly the pine nuts add a creaminess to the sauce but I'm sure it would be fine without them because 1/4 cup pines nuts is equal to one month of my rent, just kidding! (except not really, those nuts are expensive!) While I'm not as in love with recipe as I am my Wegman meatballs I would make it again, but I would also experiment with new recipes. I did omit the fennel seeds because of my intense (and unfounded?!) hatred of fennel seeds. I like fennel bulb but for some reason I just cringe when I find fennel seeds in my pizza or spaghetti sauce.
Spicy Tomato-Basil Sauce 
(Bon Appétit) 
Ingredients:
4 1/2 cups canned crushed tomatoes with added puree (from two 28-ounce cans), divided
1/4 cup pine nuts
4 1/2 tablespoons extra-virgin olive oil
3/4 cup finely chopped onion
4 large garlic cloves, minced
1 teaspoon fennel seeds (finely crushed in plastic bag)  or not.
3/8 teaspoon (or more) dried crushed red pepper
1/2 cup finely chopped fresh basil
1/3 cup dry white wine
1 teaspoon dried oregano
Freshly ground black pepper
Directions:
1. Place 1 cup crushed tomatoes in blender. Add pine nuts and blend until very smooth, about 1 minute. 2. Heat oil in heavy large pot over medium-low heat. Add onion, garlic, fennel seeds, and 3/8 teaspoon dried crushed red pepper. Sauté until onion is soft, about 5 minutes. 
3. Add remaining crushed tomatoes, 2 tablespoons chopped basil, wine, and oregano. 
4. Scrape in tomato mixture from blender and stir to combine. 
5. Simmer sauce until flavors blend, 5 to 6 minutes. 
6. Season to taste with salt, pepper, and more dried crushed red pepper (I did add more red pepper)
7. Add your meatballs!

The Pizza that took over the kitchen...

Just give me a frozen Wegman's pizza. ALL I WANT IS A FROZEN WEGMAN'S PIZZA!!!! (You hear that my dear Syracuse readers?! Find a way to mail me one!!)
It would seem that Pizza is going to be my Kitchen Arch Nemesis for a while. If you recall I made a Margherita Pizza last month that came out so-so. It was not overly flavorful, I had problems with the yeast rising, and I didn't have a proper pizza pan so parts of the crust began to burn. Oh and it didn't look pretty at all. Well tonight I used my new pizza pan from the Mother Unit, the pizza tasted delicious, and I had absolutely no problem getting the dough to rise. None at all. In fact, my pizza dough exploded and took over my kitchen. Instead of a deep dish pizza we have a creation Mr. Lawyer dubbed "Cheesey Bread with  Sauce."

Chicago Deep Dish Pizza

Dough Ingredients:
3 3/4 cups flour
1.5 teaspoons salt
1 1/3 cups warm water
1 tablespoon sugar
3 tablespoons olive oil
Pizza Dough Directions:
Whisk 3 3/4 cups flour and 1 1/2 teaspoons salt. In a bowl mix 1 1/3 cups warm water, 1 tablespoon sugar and 1 packet yeast. When foamy, mix in 3 tablespoons olive oil; add to flour and knead until smooth, 5 minutes. Brush with olive oil, cover in a bowl and let rise until doubled, about 1 hour 30 minutes. Divide into two 1-pound balls. Use 1 pound per recipe unless noted.
Directions for the Chicago Pizza:
1. Press one pound of dough into an oiled and cornmeal dusted 10-inch pizza or cake pan. (the original recipe called for two pounds of dough which I do not recommend)
2. Top with 2 cups each shredded mozzarella and tomato sauce, some cooked sausage and Italian seasoning.
3. Bake at 425 for 40 minutes.
I used some leftover spicy basil tomato sauce, a handful of leftover mozzarella mixed with a bunch of Cabot Cheddar (my life blood), and topped it with some roasted red peppers and artichoke hearts. It tasted amazing! The crust, while perfectly golden and crunchy due to the new ceramic pizza tray, was waaaay too big. It really was like dipping a loaf of bread into a saucy cheesy concoction. As a carb lover I throughly enjoyed this but poor Kevin felt it was a bit much.
That's not too much crust is it?!

Holy Guinea Pig Kitchen Success!

Tonight’s meal was full of experiments and everything game out yummy! Three experimental recipes, three successes! Mr. Lawyer made a cumber dill pasta salad last night and we let it sit and marinate alllll night and allll day. I wasn’t sure it was going to be enough to fill us up so I began thinking this salad sounds like summer time….what else reminds me of summer? Why burgers of course! And I just happened to have some ground turkey in the freezer. But what about the buns? Well I could whip up some of those too! So I started my morning trying out this sweet dinner roll recipe.
Sweet Dinner Rolls

Ingredients: 
1/2 cup warm water (110 degrees)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 teaspoon salt
3 3/4 cups all-purpose flour
1 package active dry yeast
2 tablespoon melted butter for brushing
Directions:
1. Heat up the water, add one tablespoon of the sugar and the yeast. Let it sit for 10 minutes.
2. In the meantime, warm up the milk, mix in your egg and butter.
3. At this point I put my yeast mix and milk mix in my sweeeeet food processor and slowly mixed in the remaining sugar, salt and flour.
4. Cover and let rise one hour.
5. Roll out the dough in to whatever shape you wish. The original recipe made crescent rolls, I made round slider rolls and some clover leaf rolls. For the round rolls put 7 to 9 balls in a pie pan, barely touching. For the clover leaf cut the dough into little pieces and place three pieces into each muffin cup. Cover and let rise a second time.
6. Bake at 400 for 10 to 15 minutes.
7. Brush on melted butter.

Mine came out a little dense which was perfect for slider rolls but just okay if you were doing a dinner roll. The original recipe uses a bread machine to mix the dough and take care of the rising so that might be it. They were a big hit with the boy. The recipe says that you can freeze them and reheat them at 350 for 5 to 10 minutes.

Next up: Turkey Burgers! The original recipe called for goat cheese and sun dried tomatoes but since we are a poor young couple living in the city we did not have those ingredients in our kitchen. However since I stocked up on essentials at Wegmans (♥!) before coming back to Philly, I did have Cabot Hunter Sharp Cheddar Cheese and dried cranberries on hand. Yes, Cabot Cheese is an essential that must always be in my kitchen. Also, I had to switch out the Panko bread crumbs for normal Italian ones which is a shame because I love Panko crumbs. I was skeptical about this recipe (like cooking them in wine) but they were amazing! I did add the red pepper flakes and used cracked black pepper but they weren’t spicy at all (except one bite that I got). Mr. Lawyer nearly devoured the whole plate (“How many more are there?”) and described them as “Sweet and Savory”. The sweetness of the cranberries worked really well with the sweetness of the rolls. I’m not sure what the wine did but as the boy said “It’s delicious, just do everything the same again!” I will definitely be keeping this recipe especially since I didn’t have to add ketchup which I always do with burgers!

Turkey Burger Sliders 
(adapted from allrecipes.com) 


Ingredients:
1 pound ground turkey
1/3 cup sharp cheddar (Shredded)
1/4 cup cranberries
1 clove garlic, minced
1/2 cup panko bread crumbs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon red pepper flakes (optional)
1/4 cup olive oil (I used much less)
1/2 cup white wine
Directions:
1. Mix together everything (Turkey through Red Pepper Flakes) except the Olive Oil and Wine. I like the “Claw” method of mixing and using my hand like a creepy raptor claw because all of my many food magazines inform me that over mixing the burger meat will make it tough and this method will avoid it. Really it’s just fun to pretend to be a raptor in the kitchen.
2. Make burgers 3 inches in diameters for sliders. The many food magazines also tell me to make a thumb print indentation in the middle of the patty to ensure even cooking time. Not as fun as the claw.
3. Heat olive oil in large skillet over medium-high heat (I used much less than the suggested ¼ cup, just gave the pan a good coating). Once it’s hot throw in your burgers. Cook them 2-3 minutes on each side.
4. Pour the wine over the patties, cover, and cook for 5 more minutes.
5. Remove the sliders and place on a paper towel and then eat them!


Kevin’s Cucumber and Dill Pasta Salad 
(adapted from allrecipes.com)


Ingredients:
2 cups macaroni
2 cups cucumber - peeled, seeded and chopped
1 cup chopped tomatoes
1 cup low-fat sour cream
1/2 cup skim milk
1 tablespoon chopped fresh dill weed (We used dried)
1/2 teaspoon coarse ground black pepper
1/2 teaspoon salt
1 tablespoon distilled white vinegar
Chopped onion, to taste
Directions: 
1. Cook pasta in boiling salted water until al dente. Drain, and rinse in cold water. Transfer noodles to a large bowl.
2. In a separate bowl, mix together sour cream, milk, dill, vinegar, and salt and pepper. Set dressing aside.
3. Mix cucumbers and tomatoes into the pasta. Pour in dressing, and mix thoroughly. Cover, and refrigerate at least 1 hour and preferably overnight. Stir just before serving.

I know Kevin added onion (which the original recipe did not call for) and he increased the amount of dill and pepper. We were using dried dill so we started with 1 teaspoon (in accordance to the 1:3 fresh/dried herb ratio, oh how I love my food magazines!) but ended up around 2 teaspoons.
